A chicken curry dish is a staple of Tamil cuisine, enjoyed alone, over rice, puttu, iddiyapam - you name it! Could this traditional dish get any better? Well, if you’re looking to add a fun kick, here’s a deliciously unique recipe by Chef Muralitharan Thamba who used Maple Sports Ale which has aromas of fresh grain, pepper, lemony hops, and hints of red apple, to bring out some incredible new flavours to an old classic curry.

RECIPE

 

Prep time: 20 Mins

Cook Time: 40 Mins

Total Time: 1 Hour

Yield: 4

 

Ingredients:

• 1LB Chicken Leg (Cut into medium pieces with bones)

• 1/4 Cup Maple Sports Ale

• 3 Tablespoons Coconut Oil

• 3 - 4 Tablespoons Ceylon Roasted Curry Powder

• 1/2 Teaspoon Turmeric Powder

• 1 Teaspoon Ground Pepper

• 1/2 Teaspoon Cumin Seeds

• 1/2 Teaspoon Fennel Seeds

• 1/2 Teaspoon Mustard Seeds

• 6 Small Cardamom Pods

• 1 Cinnamon Stick

• 4 Cloves

• 5 - 6 Garlic Cloves Finely Chopped

• 5 Medium Sliced Ginger Finely Chopped

• 2 Teaspoons Lemongrass

• 2 Sprigs, Curry Leaves

• 1 Pandan Leaf (Rambai)

• 1 Medium Red Onion Chopped

• 2 Medium Tomatoes (cut into pieces)

• 1/2 Teaspoon Lime Juice

• Salt To Taste

Directions for Cooking

Marinate the Chicken

• Put the chicken pieces into a mixing bowl then add Ceylon Roasted Curry Powder, Maple Sports Ale beer,Turmeric Powder, Ground Pepper, 1 Sprig of Curry Leaves, 1⁄2 Pandan Leaf, 2 Finely Chopped Garlic, 2 Slices of Finely Chopped Ginger, Lemongrass, 1 Tbsp Coconut Oil & Salt. Mix everything together well & Let it marinate for about 20 minutes.

 

Prepare the Chicken Curry

• Heat up the oil in a Clay Pot or Medium saucepan over medium heat. When the oil is hot enough add Cumin Seeds, Fennel Seeds, Mustard Seeds, Cardamom Pods, Cinnamon Stick, Cloves, Curry Leaves & Pandan Leaves in to the pan Sauté it for a few minutes.

• Then increase heat of the pan to medium high & Add Chopped Red Onion, Finely chopped Ginger & Garlic in to the pan & Sauté few minutes until the onions turn slightly golden.

• Add the marinated chicken and coat well over medium heat. Cook the chicken for about 10 minutes while stirring gently. Add the tomatoes and bring to a gentle simmer.

• Let it simmer for about 30 minutes over low to medium heat until the chicken is cooked. Add lime juice and adjust with salt if needed.
